Lamb Kofta Kebabs

I want to share with you a dish that is loved by all my family; the children wrap up the kebabs in warm chappati breads whilst the rest of us enjoy these succulent kebabs with steamed basmati rice, cucumber and mint yoghurt chutney and a green salad.

Pan Seared Salmon with Thai Cucumber Salad

Salmon is justifiably the ‘king of fish’ high in the essential omega 3s and an excellent source of protein. As it is quite a robust fish with a distinct flavour it stands up well again the zingy Thai tastes in this dish. I have adapted the classic Thai beef salad dressing for a warm salmon version. You can also cook the salmon a few hours before and allow to it to cool. The dish can be served cold as a magical starter or weekend lunch with friends.

Chickpea and Aubergine Burgers

Why not try these Arabian style burgers. This recipe is a fantastic way to disguise healthy chickpeas and aubergines in burgers that the children (and adults) will love. You could even wrap them up in greaseproof paper to give them that ‘fast food’ feel!

Rajma – Spicy Kidney Beans

Evocative of winter, Rajma are warming healthy kidney beans with a hint of spice. A dish that is low in GI, counts as one of your daily five portions of fruit and veg and can be made a day or two in advance.  In our house we serve it with freshly steamed basmati rice or hot chappati breads and a green salad on the side.
