Makes 8-10 kebabs
Ingredients:
- 400g minced leg of lamb
- 1 onion grated
- 1 beaten egg
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp garam masala (or try allspice)
- ½ green chilli deseeded and chopped
- salt to taste
- 1 tsp finely chopped coriander (or try fresh mint)
- 1-2 tbspns cooking oil
Method:
- Combine all the ingredients into a bowl and mix for 4-5 minutes until the mince starts to break down and come together almost like a dough. (You can do this in your Kenwood Chef using the K hook if you have one.) The more you work the mince the tender your kebabs will be. Taste for seasoning.
- Heat a little oil in a frying pan or griddle. Shape the mince mixture into patties or long ‘sheeks’ as you wish.
- Place the patties onto the pan or griddle and cover (a saucepan lid will do nicely). The kebabs will cook in a combination of the heat from the pan and in the steam from covering. Cook for 2 minutes on each side until slightly browned on the outside but still juicy inside.
