Roast Aubergine with Pomegranates


Serves 2

Ingredients

  • 2 large aubergines, charred and skin peeled off
  • ½ lemon juiced
  • 2 garlic cloves crushed
  • 2 tablespoons extra virgin olive oil
  • handful of chopped coriander
  • 2 spring onions chopped
  • 2 tomatoes diced
  • ½ pomegranate seeded
  • salt & pepper

Method

  1. Char the aubergine in a very hot oven (240C or Gas Mark 8) for 30 – 40 minutes until the skin is blistered. Allow to cool and peel off the skin. Mash the pulp using a fork.
  2. Mix the aubergine pulp with all the remaining ingredients. Serve at room temperature.
