Ingredients
- 2 large aubergines, charred and skin peeled off
- ½ lemon juiced
- 2 garlic cloves crushed
- 2 tablespoons extra virgin olive oil
- handful of chopped coriander
- 2 spring onions chopped
- 2 tomatoes diced
- ½ pomegranate seeded
- salt & pepper
Method
- Char the aubergine in a very hot oven (240C or Gas Mark
for 30 – 40 minutes until the skin is blistered. Allow to cool and peel off the skin. Mash the pulp using a fork. - Mix the aubergine pulp with all the remaining ingredients. Serve at room temperature.
