Angela Malik Cookery School

Peter Morrell cooks up some Chinese treats

At the Taste of London Festival last month, I stopped by a stand to watch a cookery demonstration by a dynamic young chef called Angela Malik. Her relaxed approached and confident manner held the audience in thrall.

So when I got the opportunity to join one of her classes in her Acton based cookery school a short while later I jumped at the chance.

The purpose-built cookery school is at the back Angela’s delicatessen. The deli sells a whole range of delights including Angela’s own range of delicious Indian Pestos. If you can’t get to Acton these are available from her web site and from stalls at Borough and other markets in London.

In the light and spacious cooking area, my dozen or so fellow trainee chefs were all raring to go, but first there was short presentation by Angela on how different types of foods and flavourings are combined to create that unique oriental taste.

We learnt about the four basic tastes - bitter, salty, sour and sweet and how to balance these with the addition of certain ingredients. But there is also a fifth taste, umami,� which� is found, for example,� in meat stock, cheese and mushrooms and will enhance the taste sensation of other food flavours.

Then it was time to get cooking and the course subject on my evening was dim sum, the little Chinese appetisers that are becoming more and more popular.

First on the menu was steamed pork dumplings so,� in a group of three, we chopped spring onions, mixed them with pre-prepared minced pork, added our seasonings and carefully constructed the dumplings with square ‘skins’ of pastry into an open flower like shape.

The dumplings then went into the bamboo steamer basket for a few minutes and our first effort was ready to taste. Very good they were too and this inspired us to try something a little more complex, Gyoza pot sticker dumplings.

These were a combination of minced chicken with garlic, ginger and a dark, crispy mushroom like fungus. This time the skins were round and slightly thicker and the stuffing was enclosed to create a crescent shaped mini bun

The dumplings were fried in a wok and then water added, the addition of a lid allowed the Gyozas to steam making the result a satisfying combination of a crisp outside with a cooked inside. Again the result was excellent.

The consensus was that the course had made us all more confident to try making our own dim sum at home and we were given the recipes to take away.

Angela runs a whole range of courses including Thai, regional Indian and Vietnamese and I am sure that any of these would make you a more confident cook. This is in no small part to Angela’s relaxed approached to food and her friendly staff who are also on hand to give help and guidance.

The courses would make a lovely present for a foodie or an alternative to an office night out, as it is great fun, very rewarding and everyone can join in.

Another month has disappeared amazingly fast. July has been action packed – as usual!

The big news was the huge success of our Cooking School at Taste of Birmingham. We were definitely the lead feature. A massive thank you to all the team at AEG Electrolux who built us the most stunning teaching kitchen. A great opportunity to showcase our food and Cook School using AEG’s cutting edge induction cooking technology. We taught over 450 students in 3 days! Our retail business with pestos and handmade products continues to grow and we are launching 7 London Farmers Markets in August. Feeback from Taste of London was amazing with my new Thai pesto going down a storm with show goers!

Recipe from Taste of Birmingham

�

Chilli Paneer

Serves 2

�

225g paneer chopped into bite sized cubes

1� tbspns cornflour

1� tspn plain flour�
salt to taste

oil for frying

�1 tbspn ginger puree

� tbspn garlic puree�
2 onions sliced long and thin�
2 peppers chopped long and thin

2 green chillies finely chopped

black pepper
1 tspn wine vinegar�
2 tspn soya sauce�
2 tspns tomato sauce

1 tspn brown sugar

1 tspn chaat masala

�

Method��

Combine flour, cornflour and � tsp of salt, add enough water and make a thin paste. Cut paneer into small square pieces. Dip them in the paste and fry till golden brown in colour.

Heat 2 tbsp of oil fry ginger, garlic and onions.
Add all vegetables, chillies, salt, sugar, black pepper, tomato sauce, soya sauce, vinegar.� Stir fry on a high heat for 1 minute.
Add fried paneer, mix well sprinkle on the chaat masala and serve hot.

Last week I had the pleasure of a hot and sweaty tube ride to Acton. I didn’t realise how far west it actually is, nor did I realise what a quaint little high street it has.

It seems as though things in Acton, home of the first ever Waitrose, are a-changing. Nestled between a quirky pub with hordes of punters outside and a trendy artesian bakery is the Angela Malik school and shop.

Peeping in through the window, what at first looks like a traditional English tea shop selling cakes and picnic sets turns out to be a mix up of the aforementioned with flavours of the eastern world. Then tucked away at the back is a kitchen, ready for beginners or people wanting to learn more about conventional Asian cookery.�
And this is where I fitted in, being an absolute novice when it comes to the world of creating dim sum, I was there to meet Angela and cook up a storm in the kitchen. Either that, or make the kitchen look like a storm had hit it.

Angela Malik, an alumni of Leiths, and with valuable experience atBibendum�and�Vong, is the lady behind the school. Asian food and teaching people about Asian food is what she is passionate about, so after making her mark as a chartered accountant, she realised that the daily grind of a 9-5 wasn’t for her and in 2005 shut the numbers shop up and started working towards the shop of her dreams. Looks like dreams come true.

After a wander around the little shop checking out the mix of cordials, chutneys, jams, breads, cheese and crackers with the Asian influence of poppadoms,�
Indian pesto herbs, spices, noodles and fish sauce, it was time to start cooking.

The initial part of the lesson was a little tedious, talking about the different taste sensations on the tongue… salt, sweet etc. Hmmm, I think I did that at primary school. But it all makes sense when Angela tries to include all of these taste sensations with every mouthful when she cooks. Something that I took for granted before the class started.

Pinafore on and we’re ready to start cooking, all the ingredients are set out in front of us for the first lesson of steamed spiced pork and water chestnut siu mai dumplings. Sounds hard. Is not.�

Using a bamboo steamer, something that I’ve had at home for years but never used for fear of setting it on fire, Angela went through firstly mixing together all the ingredients for the fillings then stuffing a small amount in to wonton wrappers then putting in to the steamer over hot water for ten minutes until cooked through. In the words of the meerkat from the adverts – ‘simples.’

Next up, stuffed Gyoza dumplings. The same principal goes with the mixing but we learnt different techniques for sealing the dumplings in gyoza skins then cooking them by frying and then steaming. This does involve throwing water on to hot fat, which should come with a burns warning, but the result is just as delicious as the previous ones.�

I’m used to eating at the likes of�Yauatcha,�Dim T�and�Ping Pong�and what I usually eat at this venues was right in front of me. And I made them! I couldn’t believe how simple it was to make dim sum. OK, so we had a chef extraordinaire there to help us but the thought of going home to recreate the little mouthfuls of deliciousness doesn’t seem so daunting now.�

‘After getting totally lost on the way from North Acton tube station, I eventually found the class, held in a large kitchen behind a lovely Angela Malik deli and shop. The idea of spending five hours with a group of people I’d never met was initially a little daunting but I felt totally at ease joining the group with a very warm welcome from Angela.

‘The day started with an hour of theory, learning about different taste sensations and how each can be applied to dishes. This gave us all the chance to meet each other and was a great introduction as we constantly referred back to what we had been taught throughout the day. ‘We learnt several dishes including tandoori chicken, tamarind potato salad, kofta kebabs and chappati and paratha breads, none of which I had tried before. Angela was a really great teacher, very approachable and more than willing to help.�

‘We all stopped for a relaxing lunch together and ate what we had prepared with a glass of wine, before making our last dish – aubergine and chickpea burgers – possibly my favourite. ‘The day finished at 3pm and I had a box of food to take home to my boyfriend, who was very impressed, as well as the booklet we’d used during the day including all of the recipes.’

May has been such a fun month. I was the debut chef on The Danny Baker Show BBC London Radio. Co-host and a huge friend of the�Cook�School, Amy Lame, kindly invited me to be the first chef to cook on the roof of Broadcasting House! It was an absolutely brilliant day and I fed the crew and guests (including Griff Rhys Jones!) a selection of delights including black salt & lime crusted corn cobs, thai pesto sea bream & tamarind lamb.
